Trio of scrambled eggs


3 servings

Ingredients :

6 eggs
1 tablespoon cream
3 tablespoon salmon roe
3 tablespoons lumpfish roe, or other of your choice
A few sprigs fresh herbs
Salt, milled black pepper

Procedure :

Take the top off six raw eggs and empty into a small bowl.
Season eggs, add a tablespoon creme fraiche, then mix well.
Put bowl into a large pan of boiling water, then stir until eggs are scrambled.
Fill eggshells with scrambled eggs, then add either a tablespoon of salmon roe, or a tablespoon of lumpfish roe to each one.
