Recipes and Cuisines of European Countries

There are some lists of collections of recipes and cuisines from the countries of Europe.

 

Catalan Red Mullet

4 servings

Ingredients :

4 red mullets (if small, use two per person)
800g tomatoes
1 onion
2 cloves garlic
1 sprig parsley, chopped
Olive oil
Salt & pepper
Steamed white rice


Procedure:

1. Wash and cut the tomatoes into quarters, crush the garlic and slice the onion.

2. Brown the onion and garlic in a little oil, add tomatoes and cook for 20 minutes.

3. Liquidise.

4. Seal the fish in oil in a frying pan, making sure they do not stick.

5. Season.

6. Slide the fish onto a baking tray, cover with tomato sauce, sprinkle with parsley and leave to cook for 10 minutes.

7. Serve with rice and more sauce.

- Alsace: Silvaner, Pinot blanc
- Bordeaux: Entre 2 mers, Graves Blanc
- Bourgogne: Maçon, St Véran
- Loire: Sancerre, Pouilly
